CHICKEN AND VEGETABLE PANCAKES

Preparation Method :

  • Marinate the chicken breasts in a mixture of oregano, mustard paste, salt and lemon juice for 15 minutes.
  • For the pancakes, sift the flour in a bowl. Make a well in the centre and add eggs and work the flour from the sides. Gradually add the milk and whisk to make a smooth batter. Add the salt and mix again. Set aside to stand for thirty minutes.
  • Heat one tablespoon of   oil in a pan. Add the onion and saute till transluscent. Add the marinated chicken and sear it.
  • Add wine and half a cup of water and cook till the chicken is tender. Add parsley and crushed peppercorns and mix well. Remove the chicken onto a plate and reserve the juices.
  • Heat tablespoon oil in a pan. Stir in the flour, reserved juices, milk and cream and mix well ensuring that there are no lumps.
  • Cook till the sauce comes to a boil. Remove from heat and add mustard, salt and pepper powder.
  • Heat the remaining   oil in another pan, add the carrot and stir-fry until just tender.
  • Combine the chicken, sauce and carrots well. Heat a pan and grease it. Pour two to three tablespoons of batter and cook slowly until set and lightly browned underneath.
  • Flip and cook till the other side is cooked similarly.
  • Divide the filling evenly between the pancakes and roll up. Serve immediately.

Pancakes

  • 200 grams whole wheat flour
  • 4 eggs
  • 100 ml milk
  • Salt to taste
  • Cooking oil

Filling

  • 500 grams chicken breast fillets
  • 2 small onion, sliced
  • 2 sprig parsley, chopped
  • 4 carrots, grated
  • 1 teaspoon oregano
  • 2 teaspoon mustard paste
  • 2 teaspoon lemon juice
  • 200 ml white wine
  • 5 black peppercorns, crushed
  • 2 tablespoon refined flour
  • 200 ml milk
  • 200 grams cream
  • 2 teaspoon French mustard
  • Black pepper powder to taste
  • Salt to taste
  • 5 tablespoons Cooking oil
