TURKEY LOAF WRAPPED IN SAVOY CABBAGE

Preparation Method :

  • Preheat the oven to 400°F (200°C/gas 6). Combine the turkey, sausage, bacon, Parmesan, eggs, bread crumbs, nutmeg, salt, and pepper in a large bowl and mix well.
  • Parboil the cabbage leaves in salted water for 5 minutes. Drain well. Arrange the leaves on a work surface to form a rectangle; they should be overlapping.
  • Place the turkey mixture in the middle and shape into a meat loaf. Wrap the leaves around the turkey, taking care not to tear them. Tie with kitchen string.
  • Transfer the turkey loaf to an ovenproof dish with the shallots, tomatoes, and oil. Bake for 1¼  hours, basting frequently with the wine.
  • When all the wine has been added, continue basting with the stock. Serve hot.

INGREDIENTS

  • 1 kg ground (minced) turkey breast
  • 300 grams pork sausages, crumbled
  • 100 grams bacon, chopped
  • 100 grams freshly grated Parmesan cheese
  • 2 large eggs + 2 large yolk
  • 100 grams fresh bread crumbs soaked in hot milk and well squeezed
  • Dash of nutmeg
  • Salt and freshly ground black pepper
  • 12 leaves Savoy cabbage
  • 4 shallots, sliced
  • 750 grams tomatoes, peeled and chopped
  • 100 ml sesame oil
  • 150 ml white wine
  • 150 ml beef stock
