TURKEY BREAST IN ONION SAUCE

Preparation Method :
- Roll the turkey breast and tie with kitchen string. Season with salt and pepper and dredge in the flour.
- Transfer to a heavy-bottomed pan with the oil and butter and sauté over high heat for 5 minutes.
- Add the onions, stirring carefully and making sure the turkey is always touching the bottom of the pan. Sauté for 5 minutes more.
- Pour in enough stock to almost cover the meat. Partially cover the pan, decrease the heat to low, and simmer until the meat is cooked and the onions have melted to form a creamy sauce, about 45 minutes.
- Serve hot with the mashed potatoes.

- 2 kg turkey breast
- Salt and freshly ground black pepper
- 5 tablespoons all-purpose (plain) flour
- 150 ml sesame oil
- 2 tablespoon butter
- 6 large white onions, coarsely sliced
- 1 litre beef stock
- Mashed potato, to serve
