STUFFED CHICKEN LEGS

Preparation Method :

  • Preheat the oven to 350°F (180°C/gas 4). Use a sharp knife to open the chicken legs up and remove the bone. Leave the bottom bone in to be used as a handle.
  • Place the sausage meat and truffles, if using, in a bowl and mix well. Stuff the chicken legs with this mixture. Tie with kitchen string.
  • Place the stuffed chicken legs in a baking dish with butter and the rosemary. Season with salt and pepper and bake until tender, about 40 minutes.
  • Meanwhile, cook the potatoes in a pot of salted boiling water until tender. Drain and mash well, adding the remaining butter, cheese, and milk.
  • Serve the chicken hot with the mashed potatoes.

INGREDIENTS

  • 6 large chicken legs
  • 750 grams Italian pork sausages, peeled and crumbled
  • Black truffles, cut in tiny cubes
  • 100 grams butter
  • 5 sprigs rosemary
  • Salt and freshly ground black pepper
  • 1 kg potatoes, peeled
  • 100 grams freshly grated Parmesan cheese
  • 5 tablespoons milk
