SPRING CHICKEN BAKED IN COARSE SEA SALT

Preparation Method :

  • Preheat the oven to 375°F (190°C/gas 5). Spread coarse salt on the bottom of a high-sided baking dish.
  • Tie the herbs together and insert in the abdominal cavity of the chicken with the garlic.
  • Place the chicken in the baking dish and cover with the rest of the salt. No parts of the chicken should be visible.
  • Bake for 1 ½ hours. The salt will form a firm crust. Take out of the oven and bring to the table in the baking dish. Break the crust and remove the chicken. Carve and serve hot.

INGREDIENTS

  • 6 kg coarse sea salt
  • 5 sprigs fresh sage
  • 5 sprigs fresh rosemary
  • 5 cloves garlic, whole
  • 2 kg chicken
