MOROCCAN CHICKEN SKEWERS

Preparation Method :

  • Combine the ginger, paprika, turmeric, saffron, garlic, coriander, lemon or lime juice and olive oil in a large bowl. Season well with salt and pepper.
  • Add the chicken and mix well to coat evenly. Cover and leave to marinate in the fridge for a few hours or overnight.
  • Preheat the grill or heat a griddle pan over a medium heat. Thread the chicken and lemons alternately onto skewers.
  • Cook the skewers under the grill or on the griddle for 5 minutes each side until the chicken is cooked through. 

INGREDIENTS

  • 1 teaspoon ground ginger
  • 3 teaspoons paprika
  • 1 teaspoon turmeric
  •  Few strands saffron
  • 4 garlic cloves, crushed
  • 5 tablespoons chopped fresh coriander
  • 3 tablespoons lemon or lime juice
  • 3 tablespoons sesame oil
  • Salt and freshly ground black pepper
  • 750 grams chicken breasts cut into cubes
  • 10 lemons cut into chunks
  • Fresh coriander sprigs, to garnish
