CREAMY CIDER CHICKEN

Preparation Method :
- In a casserole dish, heat the oil. Season the chicken with salt and freshly ground black pepper and then cook until browned on all sides. Remove from the pan with a slotted spoon and set aside on a plate.
- Drain off the excess fat from the pan, then add the remaining oil and fry the onion until softened.
- Add the apple and cook for a further 2 minutes. Stir in the flour and cook for 1 minute. Add the cider and bring to the boil for 2 minutes. Add the stock, thyme, bay leaf and chicken.
- Bring to the boil, then reduce the heat, cover and simmer for 20 minutes until the chicken is cooked through. Stir in the double cream and season with freshly ground black pepper.

- 10 chicken portions

- 2 medium onion, finely chopped
- 2 eating apple, cored and cut into wedges
- 2 tablespoon plain flour
- 250 ml dry cider
- 150 ml chicken stock
- Few sprigs fresh thyme
- 2 bay leaf
- 3 tablespoons double cream
