- In a large flameproof casserole dish, heat the oil and fry the onions for 5 minutes. Add the sausage meat and cook until browned all over. Pour in red wine and simmer until the wine evaporates.
- Increase the heat a little and add the chicken. Cook until sealed all over. Add the garlic and remaining wine and simmer until the wine evaporates. Stir in the carrots and pour over the stock. Bring to the boil, reduce the heat and simmer gently for 1 hour.
- Preheat the oven to 190°C/375°F/Gas 5. Place the flour and a pinch of salt in a large bowl. Rub in the butter with your fingertips until the mixture resembles breadcrumbs.
- Stir in the parsley. Add a few drops of milk and mix to a dough. Shape into a ball, wrap in cling film and chill for 20 minutes.
- Roll out the dough on a floured board and cut out 14 rounds with a round cutter. Place around the edge of the casserole and brush the scones with egg. Bake for 30 minutes until golden. Scatter with parsley.

- 6 chicken breasts, chopped
- 4 garlic cloves, roughly chopped
- 8 carrots, roughly chopped
- 750 ml hot vegetable stock
- 300 grams self-raising flour
- Salt to taste
- 100 grams butter
- Handful fresh parsley, finely chopped, plus extra to serve
- Splash of milk
- 2 eggs, beaten
