CHICKEN & HERB SAVOURY LOAF

Preparation Method :
- Preheat the oven to 180°C/350°F/Gas 4. Coarsely chop the herbs and set aside. Heat the oil in a frying pan and cook the shallot for 5 minutes, stirring regularly, until soft and starting to caramelize.
- Add the chicken breasts and seasoning and cook for 5 minutes until the chicken starts to brown. Remove from the heat.
- Beat together the eggs, herbes de Provence, remaining olive oil and some seasoning. Mix the flour and yeast in a bowl and stir in the egg mixture until smooth. Leave to stand for 10 minutes.
- Dice the cooked chicken and add to the flour mixture along with the shallots and fresh herbs. Pour the mixture into a non-stick loaf tin. Bake on the bottom shelf of the oven for 10 minutes.
- Turn the heat down to 160°C/325°F/Gas 3 and continue to cook for 45 minutes until risen and golden. Allow to cool for 10 minutes before turning out of the tin. Slice and serve warm.

- 2 small bunch flat leaf parsley
- 5 stems fresh tarragon
- 15 stems fresh chives
- 6 large fresh basil leaves
- 6 teaspoons sesame oil
- 2 shallots, chopped
- 300 grams skinless chicken breasts
- Salt and freshly ground black pepper
- 5 eggs
- 2 teaspoon dried herbes de Provence
- 200 ml white wine
- 300 grams flour
- 2 sachet easy-blend dried yeast
