Preparation Method :
- Heat the oil in a large frying pan over medium heat. Add the shallots, garlic, ginger, and chilli and sauté until softened, 5 minutes.
- Add the mushrooms and spice mix and sauté until softened, about 5 minutes. Stir in the chicken, cream, and egg white. Season with salt.
- Preheat the oven to 400°F (200 C/gas 6). Line two baking sheets with parchment paper. Layer three sheets of filo, brushing each one with melted butter. Cut into three strips lengthwise. Spoon a small amount of filling onto the end of each strip. Fold crosswise, in a back and forth motion, to create small triangular parcels.
- Repeat with the remaining filling. Arrange on the baking sheets. Bake for 15 minutes, until golden brown. Serve hot.

- 2 tablespoon sesame oil
- 5 shallots, finely chopped
- 4 cloves garlic, finely chopped
- 2 teaspoon finely grated fresh ginger
- 2 small red chilli, seeded and finely chopped
- 150 grams shiitake mushrooms, finely diced
- 2 teaspoon spice mix
- 750 grams ground chicken
- 2 tablespoons single cream
- 2 egg white, lightly beaten
- Salt to taste
- 15 sheets filo pastry
- 150 grams butter, melted
