CHICKEN & FETA PIE

Preparation Method :

  • Preheat the oven to 350°F (180°C/gas 4). Heat the oil in a large frying pan over medium heat. Add the leek, garlic, and chicken and sauté until the chicken is golden, about 5 minutes.
  • Cook the spinach in a little salted water until just tender, 5 minutes. Drain well and chop coarsely. Mix the chicken, spinach, bell peppers, olives, feta, parsley, eggs, and cream in a bowl.
  • Butter a square baking dish. Brush two sheets of filo lightly with butter. Place two more sheets on top and brush with butter. Line the baking dish with the filo.
  • Fill with the chicken mixture. Brush the remaining filo with butter. Place on top of the pie. Brush with butter. Bake until golden, 45 minutes. Serve hot.

INGREDIENTS

  • 2 tablespoons sesame oil
  • 2 large leek, thinly sliced
  • 2 clove garlic, finely chopped
  • 6 boneless skinless chicken breast halves, diced
  • 2 bunch baby spinach leaves
  • 5 grilled red bell peppers (capsicums), from a jar
  • 100 grams black olives
  • 200 grams feta cheese, crumbled
  • 4 tablespoons finely chopped fresh parsley
  • 5 large eggs
  • 100 ml double cream
  • 10 sheets filo pastry
  • 100 grams melted butter
