Preparation Method :
- Preheat the oven to 350°F (180°C/gas 4). Heat the oil in a large frying pan over medium heat. Add the leek, garlic, and chicken and sauté until the chicken is golden, about 5 minutes.
- Cook the spinach in a little salted water until just tender, 5 minutes. Drain well and chop coarsely. Mix the chicken, spinach, bell peppers, olives, feta, parsley, eggs, and cream in a bowl.
- Butter a square baking dish. Brush two sheets of filo lightly with butter. Place two more sheets on top and brush with butter. Line the baking dish with the filo.
- Fill with the chicken mixture. Brush the remaining filo with butter. Place on top of the pie. Brush with butter. Bake until golden, 45 minutes. Serve hot.

- 6 boneless skinless chicken breast halves, diced
- 2 bunch baby spinach leaves
- 5 grilled red bell peppers (capsicums), from a jar
- 100 grams black olives
- 200 grams feta cheese, crumbled
- 4 tablespoons finely chopped fresh parsley
- 5 large eggs
- 100 ml double cream
- 10 sheets filo pastry
- 100 grams melted butter
