INDIAN CHICKEN

- Heat the oil in a large frying pan (skillet), add the onions and cook gently until golden.
- Add the green peppercorns, cook for 1 minute, and then stir in the ginger and spices.
- Add the chicken pieces and cook for about 10 minutes until brown all over.
- Blend the corn flour (cornstarch) with the chicken stock, pour into the pan and cook, stirring, until it boils and thickens.
- Simmer for 5 minutes. Add the apple, cover and simmer for another 10 minutes.
- Garnish with coriander leaves.
- Serve the Indian Chicken with plain boiled rice.

- 4 tablespoons IDHAYAM MANTRA peanut oil
- 4 onions, finely chopped
- 2 tablespoon canned green peppercorns, drained and chopped
- 1 inch piece fresh root ginger, grated
- 1 teaspoon ground turmeric
- 1 teaspoon ground mace
- ½ teaspoon ground coriander
- ½ teaspoon ground cinnamon
- 4 small chicken thighs, halved
- 2 teaspoon corn flour
- 500 ml chicken stock
- 2 apple, peeled, cored and diced
- Coriander Leaves for garnishing
