- Put the chicken in a bowl with the parsley. Add the lemon juice and olive oil. Season with salt and pepper. Cover and marinate in the refrigerator for 2 hours.
- Beat the eggs in a bowl. Heat the sunflower oil in a large frying pan over medium-high heat. Drain the chicken. Dredge in the flour, ensuring that it is evenly coated. Shake to remove any excess flour.
- Dip each piece of chicken in the beaten egg. Fry in batches in the oil until cooked and golden brown, 15 minutes. Drain on paper towels and serve hot.
