FRIED CHICKEN WITH PEPPERS AND ONION

Preparation Method :

  • Sprinkle the seasoned flour on a plate. Dip the chicken joints in the flour to coat thoroughly, then shake off any excess flour.
  • Heat the oil in a heavy-based frying pan, add the chicken joints with skin side down and fry quickly until browned.
  • Lower the heat and fry gently for about 20-25 minutes, adding the onion and pepper halfway through cooking and season with salt and pepper.
  • Turn the joints occasionally so they cook evenly.
  • Cover the pan with a lid to keep them moist, but remove it for the last 10-12 minutes to allow them to crisp and brown.
  • Serve the chicken with the juices from the pan and garnish with parsley.

INGREDIENTS

  • 500 grams chicken joints
  • 1 large onion, sliced
  • 1 green pepper, cored, deseeded and finely sliced
  • 75 ml IDHAYAM Sesame oil
  • Seasoned flour
  • Salt and pepper, to taste
  • Parsley sprigs, to garnish
