CRISPY YUMMY LEMON CHICKEN

Preparation Method :
- Cover and leave to marinate the chicken in the marinade for about 2-4 hours. Make sure it is well coated.
- Heat the butter in a heavy-based pan and cook the chicken with all the marinade for 30-35 minutes or until the liquid has evaporated and the chicken is tender.
- Heat oil in a wok or deep pan over a medium heat.
- Take one piece of cooked chicken, dip it into the egg and roll in the breadcrumbs. Fry until golden brown.
- Serve hot with Spicy Tomato Dip.
INGREDIENTS
- 1.5 kg chicken drumsticks and thighs, incised
- 2 tablespoon butter
- 1 large egg, beaten
- 220 grams dried breadcrumbs

The Marinade
- 50 ml lemon juice
- 3 chicken stock cubes, crumbled
- 3 inch piece of ginger, grated
- 8-10 garlic cloves, crushed
- 2-3 green chillies, deseeded and chopped
- A handful fresh coriander, finely chopped
- 150 ml yogurt
- 1 onion, finely chopped
- 1 teaspoon freshly ground black pepper
Whole Spices
- 4-5 cloves
- 3-4 bay leaves
- 1 stick of cinnamon
Ground Spices
- 2 teaspoons chilli powder
- 2 teaspoons coriander powder
- ½ teaspoon ginger
- 1 teaspoon cumin powder
