CRISPY YUMMY LEMON CHICKEN

Preparation Method :

  • Cover and leave to marinate the chicken in the marinade for about 2-4 hours. Make sure it is well coated.
  • Heat the butter in a heavy-based pan and cook the chicken with all the marinade for 30-35 minutes or until the liquid has evaporated and the chicken is tender.
  • Heat oil in a wok or deep pan over a medium heat.
  • Take one piece of cooked chicken, dip it into the egg and roll in the breadcrumbs. Fry until golden brown.
  • Serve hot with Spicy Tomato Dip.

INGREDIENTS

  • 1.5 kg chicken drumsticks and thighs, incised
  • 2 tablespoon butter
  • 1 large egg, beaten
  • 220 grams dried breadcrumbs
  • 2 tablespoons butter
  • IDHAYAM sesame Oil, for frying

The Marinade

  • 50 ml lemon juice
  • 3 chicken stock cubes, crumbled
  • 3 inch piece of ginger, grated
  • 8-10 garlic cloves, crushed
  • 2-3 green chillies, deseeded and chopped
  • A handful fresh coriander, finely chopped
  • 150 ml yogurt
  • 1 onion, finely chopped
  • 1 teaspoon freshly ground black pepper

Whole Spices

  • 4-5 cloves
  • 3-4 bay leaves
  • 1 stick of cinnamon

Ground Spices

  • 2 teaspoons chilli powder
  • 2 teaspoons coriander powder
  • ½ teaspoon ginger
  • 1 teaspoon cumin powder
