Preparation Method :
- Place the chicken in a bowl and season with salt and a liberal amount of freshly grated nutmeg. Remove crusts and place bread in the bowl with the milk and half the vodka or sherry.
- Mix well and shape into 4 patties, then dust lightly with flour. Heat the butter in a large frying pan and cook the patties for 3 to 4 minutes on each side. Transfer to a warm plate.
- Sauté the mushrooms in the same pan, adding a little more butter if necessary. Stir in the remaining vodka or sherry and heat through.
- Add the cream and stir well to pick up the brown bits from the base of the pan, then spoon over the patties.
- Serve with Steamed New Potatoes and Glazed Carrots.

- 4 tablespoons vodka or dry sherry flour for dusting
