THAI CHICKEN WITH SNOW PEAS
The bite sized chicken recipe is mixed with Thai Green Curry Paste, fish sauce and cooked until the chicken is no longer pink and already well coated. Adding coconut milk, basil and snow peas adds more flavour to the dish. This can be served with hot white rice.

Preparation Method :
- Trim excess fat from the chicken and cut into bite-sized pieces. Top and string the snow peas.
- Heat half the coconut milk in a wok. When boiling add Thai Green Curry Paste and cook, stirring for a few minutes.
- Add the fish sauce and chicken pieces and cook, stirring constantly, until the chicken is well coated and no longer pink.
- Mix the remaining coconut milk with water and add to the wok with sugar and kaffir lime leaves.
- Simmer over a low heat for 10 minutes. Add snow peas and basil and simmer a few minutes more.
- Serve with hot white rice.

- 500 grams chicken thigh fillets
- 125 grams snow peas
- 125 ml canned coconut milk
- 2 tablespoons Thai Green Curry Paste
- 1 tablespoon fish sauce
- 1 teaspoon palm sugar or brown sugar
- 4 kaffir lime leaves
- 50 grams sweet basil leaves
