SPICED CHICKEN IN COCONUT CREAM

Preparation Method :

  • Heat the oil in a large frying pan over a medium heat, add chicken and cook until golden brown on all sides.
  • Remove chicken and set aside. Add onions to pan and cook gently until golden brown.
  • Combine coriander, cumin, chilli and turmeric. Add spice mixture to onions and cook, stirring constantly, until fragrant.
  • Stir coconut milk and tamarind mixture into pan and bring to the boil. Return chicken to the pan, season to taste with salt, cover and simmer for 15-20 minutes.
  • Add tomatoes to mixture and cook for 15 minutes longer or until chicken is tender. Serve with plain steamed rice and fried pappadums.

INGREDIENTS

  • 2 tablespoon IDHAYAM sesame oil
  • 1.5 kg chicken pieces
  • 2 onions, chopped
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cumin
  • ½ teaspoon ground chilli
  • ½ teaspoon ground turmeric
  • 3 tablespoon coconut milk
  • ½ cup tamarind pulp
  • Salt to taste
  • 3 tomatoes, peeled, seeded and chopped
