RED-COOKED CHICKEN DRUMSTICKS

This red cooked chicken drumsticks dish is cooked with a slightly salty sauce. Every piece of drumstick is tendered in the casserole for it to fully absorb the flavourings. Along with the sesame oil brushed on top of it, you will surely remember this delicious dish.

Preparation Time :
10 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Wash the drumsticks and dry on paper towels. Place in saucepan or flameproof casserole just large enough so that chicken is covered with the cooking sauce.
  • Add water and remaining ingredients except the sesame oil.
  • Bring slowly to the boil, cover pan and simmer for 30 minutes or until tender.
  • With tongs, turn drumsticks over during cooking. If any pieces are not submerged, rearrange during cooking time.
  • Turn off the heat and leave to cool in the covered saucepan. Lift the chicken pieces from the sauce and transfer to a serving platter.
  • Brush with the sesame oil and serve at room temperature with a small amount of cooking liquid for dipping.

INGREDIENTS

  • 2 kilograms chicken drumsticks
  • 375 ml dark soy sauce
  • 125 ml dry sherry
  • Piece of fresh ginger, sliced
  • 1 clove garlic, bruised
  • 10 small sections star anise
  • 1 tablespoon sugar
  • 2 teaspoons oriental sesame oil
