Preparation Method :
- Soak the dried mushrooms in the warm water for 20 minutes.
- Meanwhile, heat the oil in a large flameproof casserole, add the chicken and saute over a moderate heat for 7-10 minutes until golden on all sides.

- Add the tomatoes with their juice, tomato puree, herbs, sugar and salt and pepper.
- Return the chicken and juices to the casserole.
- Cover and simmer over a gentle heat, stirring occasionally, for 40 minutes or until the chicken is tender when pierced with a fork.
- Adjust the seasoning to taste.
- Serve hot, sprinkled with chopped parsley.
