MINCED CHICKEN WITH BASIL

Preparation Method :

  • The Chicken Mixture: Put the chillies and garlic into a mortar and pound with a pestle until well broken down.
  • Heat the oil in a wok, add the chillies and garlic and stir-fry for about half a minute.
  • Add the remaining ingredients and cook, stirring, for 3-5 minutes over a moderate heat. Continue stirring vigorously for about 20-30 seconds.
  • Crispy Garlic and Basil Garnish: Heat the oil in a wok. When hot, add the garlic and stir for about half a minute.
  • Remove with a slotted spoon, drain and then spread out to dry on absorbent kitchen paper.
  • Reheat the pan with the oil and fry the shallots for about 2 minutes. Remove with a slotted spoon, drain and then spread out to dry on absorbent kitchen paper.
  • Then add the basil and chilli to the oil and fry for about a minute. Remove with a slotted spoon and drain as before. Set aside.
  • Transfer the chicken mixture to a serving dish, garnish with the crispy garlic and basil mixture. Serve with rice.

INGREDIENTS

  • 5-6 small green chillies
  • 2-3 garlic cloves
  • 2 tablespoons oil
  • 150 grams minced chicken
  • 1 shallot, chopped
  • 50 grams bamboo shoots
  • 50 grams red pepper, cored, deseeded and chopped
  • 1 tablespoon carrot, diced
  • 1 teaspoon palm sugar
  • 50 ml light soy sauce
  • 50 ml chicken stock
  • 2 tablespoon basil leaves, finely chopped
  • Boiled rice, to serve

Crispy Garlic and Basil Garnish

  • 50 grams shallots, finely chopped
  • 50 grams basil leaves
  • 2 tablespoon garlic, finely chopped
  • 1 small red chilli, finely sliced
  • IDHAYAM Mantra Groundnut oil, for deep-frying
