CREAMY CHICKEN AND BASIL CURRY

Preparation Method :

  • Heat oil in large saucepan; stir 25 grams of green curry paste for a minute.
  • Add chicken to pan; stir over medium heat for about 3-5 minutes or until chicken is well coated in curry paste and lightly browned all over.
  • Add galangal. Stir in coconut milk; bring to boil. Reduce heat; simmer, uncovered, for about 30-45 minutes or until mixture is thick. Stir in fish sauce and basil.
  • Green Curry Paste: Process all the ingredients to smooth paste.

INGREDIENTS

  • 1 kg chicken thigh fillets, cut into 1cm strips.
  • 1 litre coconut milk
  • 2 tablespoons IDHAYAM Mantra peanut oil
  • 1 tablespoon grated galangal
  • 1 tablespoon fish sauce
  • Salt, to taste
  • 25 grams chopped fresh basil leaves

Green Curry Paste

  • 2 teaspoons grated lime rind
  • 8-9 small fresh green chillies
  • 4 cloves garlic
  • 2 stalks fresh lemon grass
  • Few fresh coriander roots and stems
  • 1 teaspoon caraway seeds
  • 2 tablespoons water
  • ½ teaspoon ground turmeric
  • 1 teaspoon shrimp paste
