COLD CHICKEN WITH WALNUT SAUCE
Cold Chicken with Walnut Sauce is another mouth-watering recipe that you can serve to your family and guests. Adding salt and pepper will give the dish a more delectable flavor. You may also serve it with crisp green salad and jacket-baked potatoes.

- Place the chicken in a large pan and almost cover with cold water. Remove the chicken and add the onion, carrot, celery, parsley, bay leaf, salt and peppercorns.
- Bring to the boil, replace the chicken, bring to the boil again and cover.
- Reduce the heat and simmer for about 1 hour until tender, then turn off the heat and leave to cool in the liquor. Do this the night before.
- When cold, remove the chicken from the pan, skin and cut into joints. Arrange on a serving plate.
- Put the bread and 250 ml/8 fl oz (1 cup) of strained cooking liquid into a blender or food processor fitted with the steel blade and blend at high speed, gradually adding the walnut pieces, until smooth.
- Add salt and pepper to taste. Spoon the sauce over the chicken and serve with jacket-baked potatoes and a crisp green salad.

- 50 gram white bread, diced
