CITRUS CHICKEN AND PINE NUTS

Bite sized chicken pieces seasoned with sherry and salt gives this recipe a luscious flavour. Combine it with its rich sauce and pine nuts, you will definitely love to cook this dish again and again. Serving it garnished with lemon slices or orange add to its delectable taste.

Preparation Method :

  • Cut the chicken into bite-sized pieces. Season with salt and sherry, pour unbeaten egg white over and mix well. Leave for 10 minutes.
  • Sprinkle with corn flour, add 1 tablespoon peanut oil and mix again. Cover and chill for at least 30 minutes.
  • Bring plenty of lightly salted water to the boil in the wok and drop in a third of the chicken pieces, stirring until they turn white.
  • Remove with slotted spoon and drain in colander. Repeat with remaining chicken.
  • Combine Sauce ingredients with 125 ml water. Heat remaining oil in the wok and fry the pine nuts over a medium heat until golden.
  • Transfer to paper towel and wipe out wok. Stir the reserved Sauce mixture and pour into the wok.
  • Cook, stirring constantly, until it boils and thickens. Add the sesame oil.
  • Return the chicken and pine nuts to the wok, heat through and serve immediately garnished with orange or lemon slices.

INGREDIENTS

  • 750 grams chicken thigh fillets
  • 1 teaspoon salt
  • 1 tablespoon dry sherry
  • 1 egg white
  • 1 tablespoon corn flour
  • 3 tablespoons peanut oil
  • 30 grams pine nuts
  • 1 teaspoon oriental sesame oil
  • 6 slices orange or lemon

Sauce

  • 125 ml orange juice, strain
  • 2 tablespoons lemon juice
  • 1 tablespoon sugar
  • 2 teaspoons light soy sauce
  • 1 tablespoon corn flour
