CHICKEN WITH DRIED POMEGRANATE

Preparation Method :

  • Rub the marinade into the chicken and marinate for about 8-10 hours in the fridge. Bring back to room temperature.
  • Heat the oil in a non-stick pan. Scrape the chicken and the marinade into the pan and brown all over for about 3-5 minutes.
  • Add the salt and little hot water. Cover and cook for about 25-30 minutes or until the chicken has cooked through. Stir occasionally.
  • Once the chicken is cooked, uncover the pan and toss in the gravy for about 3-5 minutes.
  • Taste and adjust the seasoning. Stir in the garam masala, fresh coriander and lemon juice, serve hot.

INGREDIENTS

  • 750 grams chicken joints, skinned, rinsed and all visible fat removed
  • 1 tablespoon IDHAYAM Sesame oil
  • ½ teaspoon garam masala
  • A handful of fresh coriander, chopped  
  • Salt to taste
  • Lemon juice to taste

Marinade

  • 1 tablespoon dried pomegranate powder
  • 2 tablespoon ginger-garlic paste
  • 1 tablespoon coriander powder
  • ½ teaspoon garam masala
