CHICKEN WITH BOUILLABAISSE SAUCE

Preparation Method :

  • Heat 2 tablespoon olive oil in a frying pan over a medium heat, add onions and cook until soft; remove and set aside.
  • Reheat the pan and cook the chicken until the colour turns to golden brown on all sides.
  • Adjust seasoning with salt and black pepper.
  • Add the tomatoes, 2 of the chopped garlic cloves, bouquet garni, orange rind and fennel seeds and toss to combine.
  • Cook, covered, for about 20 minutes or until the chicken turns tender.
  • Mash the butter with the remaining garlic, basil and saffron.
  • Transfer the chicken pieces to a serving dish and set aside to keep warm.
  • Whisk the flavoured butter into the sauce and gently heat through.
  • To serve, pour sauce over the chicken.

INGREDIENTS

  • 2 tablespoon olive oil
  • 2 onions, chopped
  • 8 small chicken drumsticks or thighs pieces
  • Freshly ground black pepper and Salt, to taste
  • 9 tomatoes, peeled, seeded and chopped
  • 3 cloves garlic, finely chopped
  • Small bouquet garni
  • 1 strip orange rind
  • ¼ teaspoon fennel seeds
  • 1 tablespoon butter
  • 6 fresh basil leaves, chopped
  • ½ teaspoon saffron strands
