CHICKEN WITH ALMONDS

Preparation Method :

Cut the chicken into smallish pieces and pat dry with kitchen paper towels.
Heat the butter in a large frying pan and saute the pieces, turning with 2 spoons so that they brown on all sides.
Heat the sherry and pour over the chicken, then remove the chicken to a plate.
Add the garlic and onion to the pan and cook gently for a few minutes. Add one of the sliced tomatoes and cook for 2 to 3 minutes.
Remove from the heat and stir in the tomato puree (paste), flour, stock, bay leaf and salt and pepper to taste. Return the chicken to the pan, skin side down.
Cover and cook slowly for 25 to 30 minutes, turning the chicken pieces once or twice during cooking.
Arrange the chicken pieces on a serving dish. Add the almonds, vinegar and the remaining sliced tomato to the pan, simmer a few minutes, then spoon over the chicken.
Serve with Buttered Noodles.

100 grams butter
2 tablespoon dry sherry
2 clove garlic, chopped
2 small onion, finely chopped
4 tomatoes, peeled and sliced
2 tablespoon tomato puree
2 tablespoon plain flour
500 ml chicken stock
2 bay leaves
Salt and freshly ground pepper
50 grams flaked almonds
2 teaspoon vinegar
