CHICKEN IN HOT GARLIC SAUCE

Preparation Method :

  • Marinate the chicken in all the ingredients of the marinade and keep aside.
  • Heat 4 tablespoons oil in a wok or pan and stir-fry the chicken for about 5 minutes on moderate heat. Drain and keep aside.
  • Heat the remaining oil on low heat. Keeping the heat low, add garlic and chili paste. When garlic changes colour, add tomato ketchup, soya sauce and red chili sauce.
  • Add the capsicum and onion. Stir-fry for 1 minute.
  • Add chicken. Stir-fry and add salt, ajinomoto and stock. Bring to a boil. Cook on low heat till chicken turns tender.
  • Dissolve cornflour in 2 tablespoon of water and add it to the chicken with vinegar. Thicken the sauce, stirring continuously.
  • Serve hot, garnished with chopped spring onion greens.

INGREDIENTS

  • 2 small chicken breast 
  • 1 tablespoon chopped garlic
  • 2 teaspoon red chili paste or 1 teaspoon red chili powder
  • Salt to taste
  • ½ teaspoon ajinomoto
  • 500 ml chicken stock or water
  • 1 tablespoon cornflour dissolved in 2 tablespoon water
  • 4 tablespoons IDHAYAM Sesame oil
  • 3 tablespoons tomato ketchup
  • 2 teaspoon soya sauce
  • 1 teaspoon red chili sauce
  • 1 tablespoon capsicum - cut into tiny cubes (diced)
  • 1 tablespoon onions - finely chopped
  • 1 tablespoon vinegar
  • 2 teaspoons greens of spring onions - finely chopped, to garnish

Marinade

  • 1 egg
  • ½ teaspoon salt
  • ½ teaspoon ajinomoto
  • 1 tablespoon cornflour
  • 1 tablespoon IDHAYAM Sesame oil
