Preparation Method :
- Heat oil in large saucepan and cook chicken for about 5 minutes or until chicken is browned all over, turn frequently. Remove the chicken from pan.
- Add onion to pan; stir for about 3-5 minutes or until onion turns soft. Stir in garlic, lemon grass, ground coriander, cumin, cardamom, cloves and chilli; stir over medium heat for one more minute.
- Add chicken to pan; turn until the chicken is coated with spice mixture. Stir in the coconut cream and sauce; bring to boil. Cover, cook on low flame for about 10-15 minutes or until tender.
- Remove chicken from sauce and cook under hot grill until crisp and browned all over.
- Boil sauce, uncovered, until reduced to half. Stir in fresh coriander; mix well. Serve sauce over chicken.

- 1½ cups brown onion, finely chopped
- 1 tablespoon finely chopped fresh lemon grass
- 2 tablespoons ground coriander
- 25 ml IDHAYAM sesame oil
- 1 tablespoon ground cumin
- 1 clove garlic, crushed
- 1 teaspoon ground cardamom
- ½ teaspoon ground cloves
- ¾ teaspoon chilli powder
- 100 ml coconut cream
- 1 tablespoon light soy sauce
- Salt, to taste
- 25 grams chopped fresh coriander
