PrintCHICKEN BHUNA
Deeply rooted in Bengali cuisine,Chicken bhuna is prepared by slow cooking chicken in a mixture of spices until it forms a dry curry.It is served hot with steamed rice.

Preparation Method :
- Heat the oil in a heavy-based frying pan. Add the curry leaves to the pan. Fry them gently for a minute.
- Add the ground paste to the fried curry leaves and cook gently for about 3-5 minutes.
- Add the curry powder, garam masala, cumin, ground coriander and chilli powder to the pan, cook, stirring, for about 2-3 minutes. Adjust seasoning with salt.
- Add the chicken with water if needed. Stir to coat the chicken evenly in the spice mixture, then cover the pan and cook for about 20-25 minutes or until the chicken is tender.
- Remove the lid, increase the heat and cook the curry for a further 2-3 minutes or until thick and dry. Serve the curry immediately.

- 750 grams boneless chicken breasts, cut into small cubes
- 50 ml sesame oil
- 150 ml water
- 3 Teaspoon ground cumin
- 3 Teaspoon ground coriander
- 1 tablespoon curry powder
- 1 teaspoon garam masala
- Chilli powder and salt, to taste
- 10 dried curry leaves
Ground to Coarse Paste
- 4-6 garlic cloves, chopped
- 1 large onion, chopped
- 1 inch piece fresh root ginger, chopped
