PrintCHICKEN AND YOGURT CURRY WITH MINT
Chicken breasts are cooked to perfection in yogurt and seasoned with garam masala .The piquant flavor of mint leaves enhances the taste of the gravy.

Preparation Method :
- Heat the ghee in a large pan, add the spice paste and fry gently for about 3-5 minutes.
- Add the saffron mixture with the garam masala and chilli powder, fry for another 1 more minute.
- Add the chicken pieces to the pan with the salt. Stir to coat the chicken in the spice mixture and cook for a further 3-5 minutes, to seal the chicken.
- Add the yogurt and stir well, cover the pan and simmer gently for 10-12 minutes or until the chicken is cooked.
- Cook, uncovered for 30-35 minutes or until the sauce slightly thickens. Taste and adjust seasoning with salt.
- Transfer the curry to a warmed serving dish, garnish with mint sprigs and serve with steamed rice.
INGREDIENTS
- 750 grams skinless, boneless chicken breasts, cut each
- breast into 3 pieces
- 100 grams natural yogurt
- 15 grams 1 tablespoon grated fresh root ginger
- 50 grams ghee
- 10 grams 2 teaspoons garam masala
- Few saffron strands, soaked in 2 tablespoons boiling water
- Chilli powder and salt, to taste
- Sprigs of mint, to garnish
- Steamed or boiled rice, to serve

- 1 onion, chopped
- 5 tomatoes, chopped
- 4-6 garlic cloves, crushed
- 2 tablespoon fresh mint leaves
