CHICKEN AND VEGETABLES IN CREAMY WINE SAUCE

Preparation Method :

  • Remove skin from chicken. Heat oil in pan, cook chicken in batches until well browned; drain on absorbent paper.
  • Drain all but 1 tablespoon of juices from pan, add garlic, bacon, leek and onions, cook, stirring, until leek is soft.
  • Return chicken to pan, add wine, stock and vegetables.
  • Simmer, covered, about minutes or until vegetables and chicken are tender.
  • Stir in blended corn flour and water, stir over heat until mixture boils and thickens.
  • Stir in herbs and sour cream.

INGREDIENTS

  • 1.5 kg chicken thigh cutlets
  • 1 tablespoon peanut oil
  • 2 cloves garlic, crushed
  • 2 bacon rashers, chopped
  • 350 grams leek, sliced
  • 200 grams baby onions, peeled, halved
  • 50 ml dry white wine
  • 200 ml chicken stock
  • 500 grams new baby potatoes
  • 10 baby carrots
  • 150 grams parsnip, peeled, sliced
  • 1 tablespoon corn flour
  • 2 tablespoons water
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped fresh thyme
  • 150 ml sour cream
