CHICKEN AND PORK IN PEANUT SAUCE

Preparation Method :

  • Cut chicken and pork into 3cm pieces.
  • Heat half the oil in pan, cook chicken and pork over high heat in batches until lightly browned; transfer to bowl.
  • Heat remaining oil in clean pan, add onion, garlic, sambal oelek, paprika and cumin, cook, stirring, until onion is soft.
  • Add potatoes and 2 cups (500 ml) of the stock to onion mixture, simmer, covered, 20 minutes or until potatoes are tender; cool to room temperature.
  • Blend or process potato mixture with remaining stock, peanuts and peanut butter until smooth.
  • Return mixture to pan, add undrained chicken and pork, rind and juice, simmer, uncovered, 15 minutes or until chicken and pork are tender; stir in coriander.

 

INGREDIENTS

  • 1 kg chicken breast fillets
  • 450 grams pork fillet
  • 100 ml peanut oil
  • 200 grams onion, finely chopped
  • 2 cloves garlic, crushed
  • ¼ teaspoon sambal oelek
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • 500 grams old potatoes, peeled, chopped
  • 750 ml chicken stock
  • 50 grams roasted unsalted peanuts
  • 2 tablespoons smooth peanut butter
  • ½ teaspoon grated lime rind
  • 1 tablespoon lime juice
  • 2 tablespoons chopped fresh coriander
