CHICKEN AND PORK IN PEANUT SAUCE

Preparation Method :
- Cut chicken and pork into 3cm pieces.
- Heat half the oil in pan, cook chicken and pork over high heat in batches until lightly browned; transfer to bowl.
- Heat remaining oil in clean pan, add onion, garlic, sambal oelek, paprika and cumin, cook, stirring, until onion is soft.
- Add potatoes and 2 cups (500 ml) of the stock to onion mixture, simmer, covered, 20 minutes or until potatoes are tender; cool to room temperature.
- Blend or process potato mixture with remaining stock, peanuts and peanut butter until smooth.
- Return mixture to pan, add undrained chicken and pork, rind and juice, simmer, uncovered, 15 minutes or until chicken and pork are tender; stir in coriander.

- 1 kg chicken breast fillets
- 450 grams pork fillet
- 100 ml peanut oil
- 200 grams onion, finely chopped
- 2 cloves garlic, crushed
- ¼ teaspoon sambal oelek
- 2 teaspoons paprika
- 1 teaspoon ground cumin
- 500 grams old potatoes, peeled, chopped
- 750 ml chicken stock
- 50 grams roasted unsalted peanuts
- 2 tablespoons smooth peanut butter
- ½ teaspoon grated lime rind
- 1 tablespoon lime juice
- 2 tablespoons chopped fresh coriander
