CHICKEN CASSEROLE WITH APRICOTS

Preparation Method :
- Preheat the oven to 375°F (190°C/gas 5). Place the chicken in a casserole dish. Cover with the apricots, potatoes, peas, and cilantro. Sprinkle with the powdered soup and season lightly with pepper.
- Add enough wine to the reserved apricot juice to make the liquid. Pour over the ingredients in the casserole dish and let stand for 15 minutes.
- Stir gently, then cover tightly. Bake for 1 hour, until the chicken is very tender. Check from time to time, adding more wine if the sauce is dry. Serve hot with the rice.

- 1.5 kg chicken pieces
- 500 grams apricots, drained, juice reserved
- 750 grams tiny new potatoes, scrubbed
- 500 grams frozen peas
- Handful of coarsely chopped fresh cilantro (coriander)
- 150 grams package powdered onion soup
- Freshly ground black pepper
- 300 ml dry white wine
- Freshly cooked rice, to serve
