COTTAGE CHEESE GRIDDLE CAKES

Preparation Method :

  • Put the margarine and cottage cheese in a bowl and mix well.
  • Beat in the eggs, then stir in the flour and milk and beat to a smooth thick batter.
  • Grease a griddle or heavy-based frying pan very lightly with fat, then heat until very hot.
  • Drop tablespoonfuls of the batter on to the hot surface.
  • Cook for 1 minute until just set, then turn over and cook for a further 1 minute.
  • Turn over again and continue cooking until the griddle cakes are set and golden in color.
  • Transfer to a wire rack and cover with a clean cloth to keep hot while cooking the remaining batter.
  • Serve hot with honey or a savory spread.

INGREDIENTS

  • 10 grams margarine, melted
  • 50 grams cottage cheese
  • 1 egg, beaten
  • 25 grams whole meal self-raising flour
  • ½ tablespoon skimmed milk
