Preparation Method :
- Mash the soft cheese until smooth, then beat in the two grated hard cheeses.
- Add a pinch of mustard and season with salt and black pepper.
- Stir in a pinch of cayenne pepper, and then chill for 2 hours until firm.
- Form the cheese into balls and roll each one in the chopped herb.
- Lay them on a small hot plate.
- Serve with warm water biscuits.

- 250 grams curd cheese
- 50 grams Gruyere cheese, grated
- 50 grams Parmesan cheese, grated
- Pinch of mustard powder
- Salt
- Freshly ground black pepper
- Pinch of cayenne pepper
- 8 tablespoons chopped burnet or chervil
