Preparation Method :
- Cut the peel, cherries and walnuts into small pieces and along with the raisins soak them in the rum for 2 hours or longer.
- Grease and flour a 9-inch cake tin. Line it with butter paper. Sieve the flour with the baking powder and spice powder twice.
- Beat the butter with sugar till light and fluffy.
- Beat in the eggs one at a time by adding 1 tablespoon of flour after each addition, beating all the time.
- Fold in the rest of the flour. Mix in the prepared fruit and caramel and fold it well with a spatula.
- Put in the lined tin and bake at 180°C/350°F for 45 - 50 minutes or till done.

- 25 grams glace cherries
- 1 teaspoon mixed spice
- 100 grams lemon peel
- 230 grams refined flour
- 220 grams powdered sugar
- 125 grams softened unsalted butter
- 1 teaspoon baking powder
- 225 grams raisins
- 100 ml rum
- Few drops of vanilla essence
- 4 eggs
- Caramel colour as required
