Preparation Method :
- Preheat the oven to 180°C / 350°F/Gas Mark 4. Lightly grease two non-stick muffin trays or line with paper cases.
- Sift the dry ingredients and spices together twice into a large bowl.
- Beat together the orange zest and juice, oil, milk, egg and marmalade in a second bowl, stirring well. Add to the dry mixture, stirring just to incorporate.
- Spoon the batter into the prepared tray or cases almost to the top.
- Transfer to the oven and bake for about 15 minutes or until the muffin tops are well risen and springy to the touch.
- Test one by inserting a skewer into the centre to check it comes out clean.
- Remove the muffins from the oven and allow to cool in the tray for 5 minutes, then transfer to a wire rack.
- The Icing: Sift the icing sugar into a bowl. Add the water and stir until smooth and thick enough to coat the back of a wooden spoon.
- Spoon the icing on top of each muffin and decorate with silver dragees.

- 350 grams plain flour
- 150 grams soft brown sugar
- 75 ml Cooking oil
- 2 teaspoon baking powder
- ½ teaspoon baking soda
- Pinch of salt
- 6 green cardamom pods, husks removed, seeds powdered
- ½ teaspoon ground cinnamon or cloves
- Zest and juice of 1 orange
- 100 ml semi-skimmed milk
- 1 large egg
- 1 tablespoon orange marmalade, medium cut
To Decorate
- 1 tablespoon lemon juice
- 100 grams icing sugar
- Silver dragees
