SPICED ORANGE MUFFINS

Preparation Method :

  • Preheat the oven to 180°C / 350°F/Gas Mark 4. Lightly grease two non-stick muffin trays or line with paper cases.
  • Sift the dry ingredients and spices together twice into a large bowl.
  • Beat together the orange zest and juice, oil, milk, egg and marmalade in a second bowl, stirring well. Add to the dry mixture, stirring just to incorporate.
  • Spoon the batter into the prepared tray or cases almost to the top.
  • Transfer to the oven and bake for about 15 minutes or until the muffin tops are well risen and springy to the touch.
  • Test one by inserting a skewer into the centre to check it comes out clean.
  • Remove the muffins from the oven and allow to cool in the tray for 5 minutes, then transfer to a wire rack.
  • The Icing: Sift the icing sugar into a bowl. Add the water and stir until smooth and thick enough to coat the back of a wooden spoon.
  • Spoon the icing on top of each muffin and decorate with silver dragees.

INGREDIENTS

  • 350 grams plain flour
  • 150 grams soft brown sugar
  • 75 ml Cooking oil
  • 2 teaspoon baking powder
  • ½ teaspoon baking soda
  • Pinch of salt
  • 6 green cardamom pods, husks removed, seeds powdered
  • ½ teaspoon ground cinnamon or cloves
  • Zest and juice of 1 orange
  • 100 ml semi-skimmed milk
  • 1 large egg
  • 1 tablespoon orange marmalade, medium cut

To Decorate

  • 1 tablespoon lemon juice
  • 100 grams icing sugar
  • Silver dragees
