MUESLI MUFFINS

Do you love Muffins? Muesli Muffins are here for you. With the distinct apricot taste and citrus flavour, these muffins will let you enjoy a delicious snack. The light muscovado sugar will also add a sweet taste that you will never forget.

4 large muffins

Preparation Time :
20 minutes

Cooking Time :
50 minutes

Preparation Method :

  • Preheat the oven.
  • Put the apricots and orange juice into a small bowl and leave to soak for about 15 minutes.
  • Put the eggs into a bowl and beat. Add the soured cream, oil and sugar. Add the apricot mixture and stir well.
  • Put the flour and baking powder into a bowl and gently stir in the egg and apricot mixture but do not over-mix.
  • Spoon the mixture into paper cases in a muffin tray.
  • Mix together the topping ingredients and sprinkle over the top of the muffins.
  • Bake for 25-30 minutes for larger muffins.

INGREDIENTS

  • 150 grams ready-to-eat dried apricots, chopped
  • 6 tablespoon orange juice
  • 3 eggs
  • 200 ml soured cream
  • 150 ml Cooking oil
  • 100 grams light muscovado sugar
  • 300 grams self-raising flour 
  • 2 teaspoon baking powder

Topping

  • 100 grams light muscovado sugar
  • 100 grams crunchy muesli, lightly crushed
  • 50 grams butter, melted
