Preparation Method :
- Preheat the oven to 200°C / 400°F / Gas Mark 6. Lightly grease a 12-hole non-stick muffin tray or line with paper cases.
- Sift together the dry ingredients. Whisk the eggs, almond extract, buttermilk, milk and butter together in a large mixing bowl.
- Add the chopped figs and marzipan and lightly mix it. Stir the whisked mixture into the dry ingredients quickly, but don't try to blend smoothly; the batter should be lumpy.
- Spoon the batter into the prepared tray or cases almost to the top.
- Transfer to the oven and bake for about 20 - 22 minutes or until the muffins tops are well risen and springy to the touch.
- Test by inserting a skewer into the centre to check it comes out clean.
- Remove the muffins from the oven and allow to cool in the tray for 3 - 5 minutes, then transfer to a wire rack.

- 70 grams butter, melted
- 250 grams plain flour
- 100 grams granulated sugar
- 2 teaspoon baking powder
- 2 small eggs
- ½ teaspoon almond extract
- 300 ml buttermilk
- 1 tablespoon Cooking oil, for greasing
- 75 grams dried figs, chopped small
- 75 grams marzipan, coarsely grated
- Pinch of salt
