Preparation Method :
- Preheat the oven to 180°C/350°F/Gas Mark 4. Line a 10-12 hole non-stick muffin tray with paper cases.
- Sift together the dry ingredients. Whisk together the eggs, lemon zest and juice, buttermilk, butter, 5 tablespoons of maple syrup, and the milk, in a large mixing bowl.
- Stir the dry ingredients into the whisked mixture, make sure not try to blend smoothly.
- The batter should not be too dry, add another tablespoon of maple syrup. Lightly stir in the sultanas; again, do not over mix.
- Spoon the batter into the prepared cases almost to the top.
- Transfer to the oven and bake for 20 minutes or until the tops are well risen and springy to the touch. Test by inserting a toothpick into the centre to check it comes out clean.
- Remove the muffins from the oven and allow to cool in the tray for 3 - 5 minutes, then transfer to a wire rack. Drizzle with extra maple syrup while still warm.

- 50 grams butter, preferably unsalted, melted
- Zest and juice of 1 lemon, plus up to 4 tablespoon semi-skimmed milk
- 100 ml maple syrup, plus extra for drizzling
- 2 teaspoon baking powder
- Pinch of salt
- 2 eggs
- 50 grams sultanas
