COFFEE NUT MUFFINS

Preparation Method :

  • Preheat the oven to 375°F.
  • Combine the butter and sugar in a bowl and mix with an electric mixer on medium for 2 minutes.
  • Add the egg, coffee, cream, nuts, brandy, flour, and baking powder and reduce the mixer to low. Mix until smooth and uniform.
  • Transfer the batter to the muffin pan, filling each cup ¾ full.
  • Bake for 20 minutes.
  • Remove the muffins from the oven and set aside to cool completely before serving. Store for up to 2 days in an airtight container.
  • Serve.

INGREDIENTS

  • 200 grams butter, softened
  • 200 grams sugar
  • 1 egg
  • 100 ml brewed coffee
  • 100 ml sweet cream
  • 100 grams walnuts chopped (or any nuts)
  • 1 tablespoon good brandy
  • 300 grams cake flour
  • 2 teaspoons baking powder
