Preparation Method :
- Preheat the oven to 375°F.
- Combine the butter and sugar in a bowl and mix with an electric mixer on medium for 2 minutes.
- Add the egg, coffee, cream, nuts, brandy, flour, and baking powder and reduce the mixer to low. Mix until smooth and uniform.
- Transfer the batter to the muffin pan, filling each cup ¾ full.
- Bake for 20 minutes.
- Remove the muffins from the oven and set aside to cool completely before serving. Store for up to 2 days in an airtight container.
- Serve.
