CARAWAY MUFFINS

Preparation Method :

  • Preheat the oven to 200°C / 400°F/Gas Mark 6. Lightly grease a 10-hole non-stick muffin tray or line with paper cases.
  • Sift together the dry ingredients and stir in the caraway seeds. Whisk the butter, soured cream and milk together in a large mixing bowl.
  • Quickly stir the dry ingredients into the whisked mixture, make sure not to blend smoothly.
  • Spoon the batter into the prepared tray or cases almost to the top and lightly sprinkle with salt.
  • Transfer to the oven and bake for about 25 minutes or until the tops are well risen and springy to the touch.
  • Test one by inserting a skewer into the centre to check it comes out clean.
  • Remove the muffins from the oven and allow to cool in the tray for 3 - 5 minutes, then transfer to a wire rack.

INGREDIENTS

  • 100 grams butter, melted
  • 150 ml soured cream
  • 150 ml semi-skimmed milk
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • Pinch of sugar
  • Pinch of powdered cumin
  • 2 tablespoon caraway seeds or poppy seeds
  • Cooking oil, for greasing
  • 300 grams plain flour
  • Salt, for sprinkling
