- Preheat the oven to 180°C / 360°F. Lightly grease a non-stick muffin tray or line with paper cases.
- Whisk the eggs, vanilla extract, buttermilk and melted butter together in a large mixing bowl.
- Quickly stir the dry ingredients into the whisked mixture, make sure not to blend smoothly; the batter should be a little lumpy. Add the blueberries, trying not to break them.
- Spoon the batter into the prepared tray or cases almost to the top.
- Transfer to the oven and bake for about 20 minutes, or until the muffin tops are well risen and springy to the touch.
- Test one by inserting a tooth pick into the centre to check it comes out clean. Remove the muffins from the oven and allow it to cool in the tray for 3 - 5 minutes.
- Transfer to a wire rack. Dust with sifted icing sugar before serving.

- 75 grams butter, melted
- 100 grams fresh or frozen blueberries
- 175 grams plain flour
- 150 grams granulated sugar
- 2 teaspoon baking powder
- Pinch of salt
- 2 eggs
- ½ teaspoon vanilla extract
- Cooking oil, for greasing
- Icing sugar, for dusting
