Preparation Method :
- Line a muffin tin with paper cake cases.
- Sift the flour, baking powder and salt into a large bowl. Stir in the sugar and blackcurrants.
- Whisk the egg with the milk and melted butter. Stir into the dry ingredients until just mixed.
- Spoon the mixture into the cake cases and bake in a preheated oven, 190°C / 375°F / Gas Mark 5, for 22-25 minutes or until well risen. Serve the muffins warm.

- 2 teaspoon baking powder
