BLACKCURRANT MUFFINS

Preparation Method :

  • Line a muffin tin with paper cake cases.
  • Sift the flour, baking powder and salt into a large bowl. Stir in the sugar and blackcurrants.
  • Whisk the egg with the milk and melted butter. Stir into the dry ingredients until just mixed.
  • Spoon the mixture into the cake cases and bake in a preheated oven, 190°C / 375°F / Gas Mark 5, for 22-25 minutes or until well risen. Serve the muffins warm.

INGREDIENTS

  • 150 grams blackcurrants
  • 150 ml milk
  • 100 grams butter, melted and cooled
  • 150 grams plain flour
  • 5 tablespoon caster sugar
  • 2 teaspoon baking powder
  • 1 egg, beaten
  • ½ teaspoon salt
