APRICOT AND CINNAMON MUFFINS

Preparation Method :

  • In a large bowl, mix together the egg, sugar, milk, margarine and vanilla essence.
  • Sift the flours, baking powder and cinnamon together onto a greaseproof paper to make the muffins light and airy.
  • Sift the dry ingredients into the bowl of the egg mixture and stir gently. Add the apricots and combine lightly.
  • Spoon the mixture into 8 paper muffin cases and then place in a muffin tray.
  • Preheat the oven to 190°C/375°F/ Gas Mark 5. Bake for 10 minutes or until golden and risen.

INGREDIENTS

  • 150 ml semi-skimmed milk 
  • 100 grams plain flour 
  • 50 grams margarine, melted
  • 100 grams wholemeal plain flour
  • 2 teaspoon baking powder 
  • 50 grams ready-to-eat dried apricots, chopped
  • 1 teaspoon ground cinnamon 
  • 1 egg, beaten 
  • 2 tablespoon caster sugar 
  • ½ teaspoon vanilla essence
