MANGO- BANANA CAKE

Preparation Method :
- Peel the mangoes and puree without adding water to it and it keep aside.
- Sift the flours with the salt, baking soda and powder.
- Beat the softened butter with the sugar till light and fluffy.
- Add the eggs one at a time followed by the essence.
- Add the flour gradually alternating with the milk till just combined.
- Mash the banana. Fold in the pureed mangoes and the mashed banana gently.
- Bake in a floured and buttered round pan at 160°C/ 325°C for about an hour or till the toothpick inserted in the centre comes out clean. Cool on a wire rack.

- 275 grams castor sugar
- 150 grams refined flour
- 3 tablespoon wheat flour
- 50 ml milk
- 1 teaspoon mixed fruit essence
- ½ teaspoon baking soda
- 3 eggs
- Pinch of salt
- 2 ripe mangoes
- 1 banana
