- In a large bowl, beat the egg yolks, sugar, honey with the lemon and lime rind.
- Whisk the egg whites until they form soft peaks, then fold into the mixture, then add in the cornflour and flour.
- Spoon the mixture into a lightly greased and lined 9-inch loose-bottomed cake tin.
- Preheat the oven to 190°C/375°F/ Gas Mark 5. Bake for 20 minutes or until firm to the touch.
- Turn on to a wire rack and allow it to cool.
- Mix together the icing sugar and lime juice and spread over the cooled cake.

- 2 tablespoons caster sugar
- 50 ml runny honey
- Grated rind of 1 lemon
- 50 grams cornflour, sifted
- Grated rind of 1 lime
- 2 teaspoons lime juice
