FROZEN FRUIT CAKE

“Cake and ice cream in one.” This Frozen Fruit Cake is really good to have during summer and hot seasons. This fruity cake tastes like an ice cream. It is also garnished with thin cherries and creams. You will be refreshed if you will try this cake.

Preparation Method :

  • Mix ¼ cup of milk with the two eggs and vanilla essence. Heat the rest of the milk and, when it has nearly boiled, take it off the heat.
  • Add the cornflour to the egg mixture and pour it into the hot milk. Return to the heat and cook gently till the custard thickens.
  • Dissolve the gelatine with water and add it to the custard, sweetening to taste. Cool, then place in the refrigerator until thick.
  • Mix the other ingredients together and add to the custard.
  • Grease a loaf tin and pat the mixture evenly inside it. Freeze until firm.
  • Turn out on a serving platter. Garnish with additional cream and cherries.

INGREDIENTS

  • 400 ml milk
  • 2 eggs, slightly beaten
  • 1 teaspoon vanilla essence
  • 50 grams cornflour
  • 10 grams gelatin
  • 1 tablespoon water to dissolve gelatine
  • Sugar to taste
  • 200 grams crumbled macaroons
  • 200 grams nuts, chopped
  • 200 grams cream, half whipped
  • 200 grams raisins
  • 100 grams tinned cherries, pitted and chopped in half
