STRAWBERRY CHEESE CAKE

Preparation Time :

Preparation Method :

  • Crush the biscuits coarsely. Melt the butter and mix well to form a crust. Put in a small pie dish with a loose base. Bake for 10 mins at 180°C/350°F. Cool.
  • Beat the cream cheese and sugar with a hand mixer. Then blend in the cream.
  • Melt the gelatine in 50 ml of warm water and add to the cream.
  • Mix in the strawberry puree. Pour it over the biscuit crust. Refrigerate for about 5 hours or until set. Remove from pie tin and serve chilled.
  • Melt some strawberry jam in a heavy bottomed pan, pass it through a sieve and glaze the top of the cheesecake with the warm jam.
  • Top with sliced strawberries, use a brush and glaze the strawberries for a great finish.

INGREDIENTS

  • 100 grams pureed strawberries
  • 75 ml cheese spread
  • 150 ml fresh cream
  • 1 tablespoon gelatine
  • Sugar to taste

For the crust

  • 75 grams butter
  • 10 digestive biscuits
  • Few drops of pink edible colour
  • 6-inch pie tin
